A sheet pan on a Brattleboro Sunday
Sunday is when the half sheet fails. The oven has been on since morning because the apartment is cold, the pan goes in at whatever the dial calls 450, and an hour later someone needs the sink.
The sink is cold. The pan is not. Water hits the steel, the steel twists, and the sheet never sits flat again. We cannot hammer it true. Oil pools in the belly. A tray of vegetables rolls to the low corner. People carry the twisted pan down Flat Street and ask for a repair. We show them the five warped half sheets leaning on the back wall. Those are not for sale. They are there so we can point instead of shrugging.
Apartment ovens are a second problem, separate from the twist. Elliot Street sits up the hill from us. The grade is steep. A kitchen up there and a kitchen down by the brook do not share one rack. Some racks are narrow, and some dials lie. A half sheet from our shelf is about 18 by 13 inches on the outside, rim included. A quarter is about 13 by 9.5. If you are unsure, measure the rack before you walk down. Bring the number. We will not guess from the name on the stove.
Our sheets are aluminized steel with a rolled rim and no coating. They brown. A dark sheet can still be straight, and a straight sheet can still cook. A warped sheet cooks badly. Do not confuse stain with damage. Stain is the pan doing the job. Warp is the sink.
Let the pan cool on the rack, or on the stove grates, until you can hold a hand near the rim. Then wash it. In a February kitchen the sink is the only clear surface and you are done cooking. Wait anyway. Ten minutes is cheaper than another half sheet at $32. The quarter sheet is the one that fits a smaller oven, and it warps for the same reason if you shock it. Size does not make the steel patient.
