Sheet pans
Quarter and half sheets in aluminized steel. Rolled rim. No coating. They brown, they stain, and a dark sheet can still be a straight sheet. Those are different facts.
Do not run a hot sheet under cold water. The steel twists, and we cannot hammer it true. Oil pools in the belly. Vegetables roll to the low side. We keep five warped half sheets on the back wall so we can point at them instead of pretending we have a repair. They are not for sale. Let the pan cool on a rack, or on the stove grates, until you can hold a hand near it. Then wash it. In a February kitchen the sink is the only clear surface and dinner is over. Wait anyway. Ten minutes is cheaper than another half sheet.
The half sheet is about 18 by 13 inches on the outside. The quarter is about 13 by 9.5, rim included. Apartment ovens up the hill on Elliot Street and kitchens down here on Flat Street do not share one rack width. If you are unsure, measure and bring the number. We will not guess.
A light film of fat is enough for most vegetables. For fish, use the pan you are willing to scrub. We do not carry silicone mats, and we do not carry glass dishes. A sheet that is still straight and unused can come back within 14 days. A warped one is yours. The counter rules are on the terms page.
